The thickness was PERFECT too! I used 1/4 cup quick oats and 1/4 cup almond milk. Like REALLY loved it! □ I ate it as a dip, in a sandwich, with a spoon… and I think I dreamed about it last night too □ I think I could taste the beans a little bit, but that was probably only because I knew they were there. I made your cookie dough batter dip yesterday and I loved it. So, yes, Katie, “normal” people like your recipes! Thanks for another great one! (And sorry this is so long!) When questioned, she said, “Well, you know I have to make those blondies again!” I looked in the refrigerator, and there was a plastic storage container filled with flax seed that she had purloined from my jar. This morning when I went to pack my flax seed, the container seemed suspiciously light. No waiting for a mother with blondies on the mind. Like, as soon as we finished dinner she wanted her dessert. Well, my curiousity got the better of me and I tasted them. And after the blondies came out of the oven, she just kept moving the tray around and did not even try one of them (she usually “tests” everything she makes almost immediately). Baking soda is just for flavor since the dough will be eaten raw and doesn’t need to rise in the oven. Maple syrup provides just the right amount of sweetness and a hint of caramel flavor. We skip the vegan butter and use creamy peanut butter for rich flavor, healthy fats, and to help the dough stick together. You can use regular rolled oats in a pinch, but quick cooking oats will blend up creamier. ![]() Quick cooking oats give the dough body and a cookie dough mouthfeel. It’s an easy way to get your daily dose of flax while eating a decadent dessert all at the same time! Read all about the health benefits of flax butter here. Speaking of healthy, I like to tuck a spoonful of flax seed butter into this recipe for a burst of Omega-3. Plus, you get all the protein and fiber of beans which makes this healthy treat ultra-satisfying. Embrace your inner Dora the Explorer, this cookie dough is made from chickpeas!
